You can go to the options & change the ref & each ref is different. One is a normal ref, one counts faster, but is slack on submissions, but then the third you unlock has a slow count, but is better with submission as he is the MMA ref. Shame though as its a cool dynamic if you could give him a personality. Like being soft on some rules like Earl Hebner was, cause he wanted the match to have a clear finish.
