Since All Stars came out on on demand, I was thinking of trading in my disk copy and get that one so I can just play a match here or there on a whim.

 

My question is, will that game use the same save file or do I have to unlock everything again?

It should use the same save files. I got a copy of the GoD version of Halo: Reach when the update locked out the Disc Format beta copies, I didn't have to redo anything in the game.
